Mediterranean Quiche

I thought I would give a quick recipe for the quiche, though I basically threw it together, so these are approximations.

Mediterranean Quiche

1 9-inch unbaked pie crust
4 eggs
2 cups light cream (single cream for the Brits and Aussies) or whole milk
1/4 tsp. sugar
3/4 tsp. salt
half of a red pepper (capsicum)
half a medium white onion
handful of spinach
3-5 oz. of goat cheese (use a small log or half a big log)

Preheat oven at 425F

Roll pie crust and place in pie dish or tart pan.  Flute edges as you wish.  Combine red pepper and onion.  Distribute this mixture evenly on the bottom of the crust.  Chop or tear spinach into smaller pieces, then sprinkle evenly over the red pepper and onion.  With your fingers, quickly and lightly tear off pieces of goat's cheese and sprinkle evenly over spinach.  Tiny pieces all over work best.  Beat eggs and add cream, mixing well.  Add sugar and salt, mix and pour mixture into pie crust. 

Bake for 15 minutes at 425, then reduce heat to 300F and cook an additional 30-35 minutes.  Done when knife inserted in the center comes out clean.  Plate and eat with a side salad and glass of wine.
