Little Surprises

I love my husband.  He drives me batty sometimes, sure.  But I absolutely am amazed daily by how much I adore him.  When he's at work/school I try and keep busy because quite frankly, as my best friend I miss him terribly.  And so occasionally I try and win wife of the year to remind him why he puts up with my bitchy mood swingy passionate ass.  Today was one of those days.  At approximately midnight today I put a chicken in the oven to roast.  It turned out well, I used a new method from Madame Stephanie and the only thing I did differently was because I cooked it a shorter time (because I was using a smaller type chicken) I had to take the chicken out of the roaster and roast the veggies longer to get them done.  Very yummy and we're having it for dinner.  I think next time I will start roasting the veggies first, to give the potatoes a chance to crisp up (the chicken gives this a lot of liquid which will be used later this week!).

After the chicken was done I pulled a leg and a wing off (it literally fell off the bone so I had to do this carefully!).  I assembled this, some potatos, onions, and carrots in a dish.  Then I put together some red leaf lettuce in a dish, and in a small old tupperware container the size of a shot glass I made a vinaigrette. I put all of this together and added some things and then made this for G to find.  

His lunch is in a bag tied up so he can't peek.  I put in a cloth napkin wrapping up a salad fork and a dinner fork.  In the bag with the madeleines is some of the grapefruit candy I made previously.  


I love sending him to work/school with yummy things.  His classmates get jealous (although they will be happy later this week, I'm making cookies for them all!), and Garret gets a yummy, healthy lunch for very little.  He talked about picking up a frozen dinner last night and I told him I could roast an entire chicken for not much more than the price of one frozen dinner.  He didn't object in the least!

  2. That looks so good! And you are such a good wife! My lunches for Jesse aren't nearly so exciting or wonderfully presented. Oh well, something to work on.

  3. You made it! I'm so excited someone used one of my recipes. I can see what you mean about the vegetables taking longer if the bird is smaller.
