Simple Lunch

In a skillet, take some chopped onion in a little butter and sauté.  Add 2-3 beaten eggs and begin to scramble.  Sprinkle on some cheese (cheddar, pepper jack, white mexican cheese) and finish making scrambled eggs.  Add a little sour cream and some of the Pioneer Woman salsa and enjoy!  


Had this and some chips and salsa for lunch.  Yummy and fairly healthy (just don't go too crazy with the butter and cheese).

  1. Missed lunch today (bad I know - too busy helping kids before their Chemistry quiz in my class today!) but my husband and I did make risotto on Friday which was even better warmed up as leftovers! :)

  2. Kaycee-- I have something sad to admit. I've never made risotto. I have the rice, I have inspiration from our favorite Italian chain in England, and yet, I'm afraid of messing it up. My other fear was that it wouldn't be good the next day, but now that you've said you eat the leftovers I am gonna give it a go!

  3. I have a great 'microwave' risotto recipe that is sooooo easy - it replaces the stirring with microwaving. It was a great introduction recipe for me to get started on risottos and tastes divine!! Would u like it?
