Simple Guacamole

Last night for dinner G and I used up some of the roasted chicken he made me last week and made a yummy spanish style meal.  We took the thigh meat from the chicken and added cayenne pepper, cumin, garlic, onion, and some fresh tomatoes and simmered in a petite amount of water until the chicken was hot and the water had been absorbed/evaporated.  


We also made some black beans with corn and green chiles, some spanish rice and I made some homemade guacamole.  It's not an exact science really, but I thought I would let you know how I made it last night since it was oh so yummy!


Simple Guacamole
*3 ripe avocados
*2 medium tomatoes, deseeded and chopped
*1/2 an onion minced
*1 small jalapeno, chopped very fine
*Overfilled teaspoon of chopped garlic
*bunch of cilantro chopped fine, to taste (I think we used 1/3 to 1/2 c.)
*1 small lime, juiced
*dash of cayenne pepper
*1 tsp. sea salt


Slice and mash the 3 avocados until well smashed up (I leave mine a little chunky).  Pour lime juice over it (to keep it from turning brown) and mix well.  Mix in salt, cayenne and garlic.  Add tomatoes, onion, jalapeno and cilantro and combine.  


Ta da!  It's super yummy, healthy fats and adds a buttery flavor.  Who doesn't love that?
