Mixed Up Salad

I have been eating a lot of caprese salads and a lot of salads with tuna and red onion.  Tonight I decided to mix it up.  Fresh mozzarella, red onion (super thinly sliced), roma tomatoes (love my CSA!), fresh basil (from my CSA), with fresh black pepper and extra virgin olive oil and we split a can of tuna in olive oil.  I was worried about it tasting good together, but after the first bite we realized this will now be a weekly meal for the summer.  It was delicious, perfectly satisfying, and a light meal that doesn't leave us feeling sluggish. 

Now I'm off to continue reading "A Good Year."
