Shrimp with pineapple in coconut oil
Easy as pie: Heat a little bit of oil in a pan. (I used coconut oil because the flavors sounded amazing, but where I got the recipe from, they use olive.) Add raw shrimp and chunks of fresh pineapple. Sprinkle sea salt and pepper to taste. Saute until the shrimp is cooked and the pineapple is softened. (this will mean juice is expelled making a nice little juicy sauce.) I suggest serving over rice, but I was lazy and didn't want to make any.
Simple, and it was supremely delicious. Tasted like summer!
