Simple Saturday Meal

It's been a while since I put anything about cooking up (probably because cooking has been nearly nonexistent).  So tonight I thought I'd share the main part of my dinner and explain how easy it was to cook!
Shrimp with pineapple in coconut oil

Easy as pie:  Heat a little bit of oil in a pan.  (I used coconut oil because the flavors sounded amazing, but where I got the recipe from, they use olive.)  Add raw shrimp and chunks of fresh pineapple.  Sprinkle sea salt and pepper to taste.  Saute until the shrimp is cooked and the pineapple is softened.  (this will mean juice is expelled making a nice little juicy sauce.)  I suggest serving over rice, but I was lazy and didn't want to make any.

Simple, and it was supremely delicious.  Tasted like summer!

  1. Are you sure that isn't just a preggie dish? jk.
That really is a simple dish although I've been having so much shrimp that I can just eat the pineapple alone for dinner. Thanks for sharing, Kalee!
