Because last night I went out to dinner with girlfriends, I already have some things on hand for dinner. Here's what my week looks like tentatively:
Monday:
* Breakfast: French toast with a banana and blueberries.
* Lunch: skipped, was in the middle of making cinnamon rolls--- I enjoyed one with a friend over coffee this afternoon.
* Dinner: Roasted chicken, mashed potatoes, roasted beets, steamed broccoli and a salad with a glass of red wine.
Tuesday:
* Breakfast: Tea with cereal and fruit.
* Lunch: I have a luncheon I'm attending at an Irish pub.
* Dinner: Roasted chicken, mashed potatoes, roasted beets, steamed broccoli and a salad, red wine.
Wednesday:
* Breakfast: Tea and toast with a scrambled egg and fruit.
* Lunch: Salad with , beets, red kidney beans, tomatoes, carrots, cucumbers and croutons.
* Dinner: Goat cheese tart with mushrooms, onions and and a salad.
Thursday:
* Breakfast: Tea and french toast with fruit and pecans.
* Lunch: Goat cheese tart, roasted chicken and salad.
* Dinner: Goat cheese tart, roasted chicken and salad.
Friday:
* Breakfast: Tea and an omelette with mushrooms, onions, and peppers and a piece of toast.
* Lunch: Goat cheese tart and a salad.
* Dinner: Salmon with asparagus, broccoli, tomatoes and mashed potatoes with bubbly.
Saturday:
* Breakfast: French toast with fruit and pecans.
* Lunch: Salmon with asparagus, broccoli, tomatoes and mashed potatoes with bubbly.
* Dinner: Roasted chicken and vegetable soup with a salad.
Sunday:
* Breakfast: Tea and toast
* Lunch: Irish meal at church
* Dinner: Cup of soup and a salad.
The roasted chicken will last longer than just this week, with parts being frozen for a later date. It's going to be the beginning of Lent, so no meat on Fridays, or this week on Ash Wednesday. This menu planning will come in very handy for Lent because I'll be able to make sure I plan for vegetarian or pescetarian meals on Fridays.

Meal Plan
So, in order to assure that we wouldn't be eating out this week (something we did, oh, most of the weekend) I was up at 3 a.m. this morning (couldn't sleep) writing a meal plan and grocery list. Garret was kind enough to tell me to get some sleep, to not bother going into work with him, and that he would pick up what we needed. So, although there is a lot of repetition, I thought I would share what we plan to have this week!
Monday
Lunch: I believe this will be a simple frozen pizza to enjoy while I prep for dinner ( I didn't write anything up because I assumed I would be picking some sushi or whatnot up from the commissary for lunch).
Dinner: Roasted chicken with mashed potatoes, roasted asparagus and baked tomatoes. Brownies for dessert with coffee.
Tuesday
Lunch: Roasted chicken, mashed potatoes, roasted asparagus.
Dinner: Homemade chicken noodle soup with plenty of veggies and a salad on the side.
Wednesday
Lunch and Dinner: Chicken noodle soup and salad (and nope, we never get sick of soup, so although it's a repeat we'll both eat it up!)
Thursday
Lunch: Chicken noodle soup (Tuesday and Thursday are the days G eats lunch at work, so we keep it simple for him. That way he can eat at his desk if he wants and use his lunch time to run errands, read, etc.)
Dinner: Nicoise salad (salmon with eggs, fresh green beans, new potatoes, olives, tomato, etc.)
Friday (because of Lent we don't eat meat on Fridays, so I had to think on this....originally was going to be homemade pizza!)
Lunch: Dijon Salmon with roasted asparagus, roasted red potatoes and a salad with dijon vinaigrette.
Dinner: Thin spaghetti with garlic shrimp, mushrooms, and onions in a tomato sauce with salad and red wine.
I got hungry just typing this up! Are you cooking anything super yummy this week? Trying out any new recipes? Perhaps being inspired by a recent dinner out (we do this a lot....copy meals we had out)?
