In an effort to use up the last of the wilting cilantro from our CSA, I decided to go with a mexican style meal for dinner. I knew we had some tilapia I wanted to use, and we picked up some black beans and jalapeno from the store. I had planned to make cilantro lime rice, but when I saw the potatoes we had I decided to make smashed potatoes. Our meal:
Cumin tilapia on top of cilantro sour cream smashed potatoes with jalapeno black beans and fresh sliced tomatoes.
MMMMMMM! Sounds delish!
