Cooking For One Update

With G having been gone a month I'm quite proud of how much actual cooking I've done on my own.  From quiches to tarts, from roasted chicken to pizza, and let's not forget from scratch cinnamon rolls and French chocolate cake.  I don't say this to brag (though I am proud of myself) but to say that it can be done.  And I can tell you that it is entirely worth the effort!

Last week I decided to make tacos, or actually a burrito bowl, using the roasted chicken breast I had frozen.  While that was defrosting I mixed up a batch of salsa.  Then it was onto beginning the cilantro-lime rice.  While that was cooking I put a can of spicy black beans on the stove to slowly heat up.

About this time I realized that I was out of taco seasoning.  No worries, I looked up a recipe and made my own.  The chicken went into a skillet with about a cup of water and plenty of taco seasoning and I cooked that until the water was gone.

While those are all going I go ahead and make up a corn and red onion salsa with cilantro and lime.  (I LOVE cilantro!).  And I shred about 2 Tbsp. of a Wisconsin cheddar, enough for 2 meals.  I chop up a tomato and get out the sour cream and I am good to go to create this:

And while I worried it'd be easy to put on weight the first month he was gone because of loneliness, I've actually lost weight.  Still haven't been to the gym, still haven't weighed myself.  However, my clothes are looser.  I'm going to say it's probably that I've been trying to make meals healthy that stretch, I've been out having coffee and walking with friends, and I go up and down 2 flights of stairs at least 6 times a day (and sometimes upwards of 20).  On top of that I've been making it a point to get plenty of sleep.  Sure that meant this morning I forgot to take the recycle out, but eh....it was worth it.

  1. That looks amazing! I also find that when I'm busy, I don't eat because I'm bored and then I tend to lose a little bit of weight. Also, with the warmer weather coming, I crave fruits and veggies instead of heavy carbs.

  2. This looks delicious. I love burrito bowls because there is no tortilla to mess up the complex flavors of all the yumminess that is meat and vegetables. AND you can throw just about anything there.

    So healthy, and so budget friendly!

  3. First of all, congratulations on taking such good care of yourself. I find cooking for myself a very kind act of self-respect.
    Then, that dish looks delicious! I should start buying avocados again...
